INGREDIENTS:
- 2-3 garlic cloves, chopped
- 1/2 inch ginger piece, thinly sliced
- 1 green onion, chopped
- 1 star anise
- 1/2 cinnamon stick
- 7 tablespoons ground red chili
- 5 dried red chili peppers
- 1 teaspoon red Sichuan pepper corns
- 1 teaspoon green Sichuan pepper corns
- 1 cup peanut oil
COOKING INSTRUCTIONS:
2. Mix the processed spices with the ground red chili powder and put in a small glass jar.
3. Heat the peanut oil on medium high for five minutes and add the garlic, ginger, green onion, star anise, and cinnamon stick. Keep stirring, and reduce heat if necessary. Simmer for about 10 minutes, but do not burn the garlic and dried peppers. Adjust the heat accordingly such that the ingredients simmer in the oil without burning.

4. Strain the oil into a small pan, and heat on medium high until the oil starts to smoke.
5. Slowly pour the hot oil into the glass jar containing the ground red chili pepper, green Sichuan pepper, and red Sichuan pepper. The mixture should bubble, hiss, and boil.

6. Allow the mixture to cool, and then use as a spicy condiment for various dishes.
