Leeks with Pork and Eggs

INGREDIENTS:

  • 1/4 to 1/2 pound of pork meat (rib, butt/shoulder, or tenderloin)
  • 2 large eggs
  • 1-2 handfuls of Chinese leeks (not the large green onions, but the true Chinese leeks—looks like tall blades of grass)
  • 2-4 tbsp soy sauce
  • 2-4 tbsp Chinese red cooking wine
  • 2 tbsp Chinese black vinegar
  • 1-2 tsp corn starch
  • 2-4 tbsp peanut oil
  • 1-2 green onions, chopped
  • 1/2 inch ginger, peeled and thinly sliced
  • 2-4 fresh red chili peppers, chopped (depending on desired level of heat); can also use hot green peppers

COOKING INSTRUCTIONS:

  1. Thinly slice the pork and soak in mixture of 1 tbsp soy sauce, 1tbsp Chinese red cooking wine, and 1-2 tsp cornstarch.
  2. Clean the leeks, cut off the white tips, and then cut into 3-4 inch pieces.
  3. Scramble the eggs in a small bowl or cup.
  4. Heat 1-2 tbsp of peanut oil on medium to medium-high heat; pour in the eggs, and tilt/rotate the wok or pan to spread the eggs out into a thin circle.
  5. Once the egg is cooked on one side and starting to lightly brown, flip it over and cook the other side until lightly brown.
  6. Remove the cooked egg and place on a cutting board, roll it up, and slice the role into 1/2 inch pieces, thus making several strips of egg.
  7. Heat 1-2 tbsp of peanut oil on high heat and add the marinated pork.
  8. Stir fry the pork, adding 1-2 tbsp of soy sauce, Chinese black vinegar, and red cooking wine. Cook for about 3-5 minutes, until the pork is cooked through, but not overdone.
  9. Remove the pork and set aside.
  10. Heat 1-2 tbsp of peanut oil on high, add the green onions and ginger (note, you can add some garlic if you want, but the leeks already have a strong flavor similar to garlic), and stir fry for a minute or so.
  11. Add the cut green leeks and stir fry for several minutes, adding 1 tbsp of soy sauce and Chinese black vinegar.
  12. When the leeks are nearly cooked (soft but not mushy), add the cooked pork and stir fry for a bout a minute, then add the cut egg and stir fry for another minute.
  13. Plate and serve.
