Cucumber Cold Dish

Ingredients

  • 1-2 cucumbers (English cucumber is an excellent choice)
  • 2-3 garlic cloves
  • 1 teaspoon sesame oil
  • 3 tablespoons soy sauce
  • 3 tablespoons Chinese black vinegar

Cooking Instructions

  1. Cut the cucumber in half longwise and clean out seeds (can scoop out with a spoon).
  2. Thinly slice the cucumber halves.
  3. Pile the sliced cucumbers on a plate. (Tip: put the sliced cucumbers into a bowl, place a small plate on top of the bowl, then turn upside down–the bowl acts as a kind of mold to make a nice mound.)
  4. Peel and slice the garlic cloves and then mash in a mortar and pestle.
  5. Mix in  soy sauce, sesame oil, and Chinese black vinegar (you can also crush in some red chili peppers for spice!!). Keep mashing and mixing for several minutes. Let sit until ready to serve. (Tip: prepare this dish first and let the sauce sit until all the other dishes are ready to serve, allowing the flavors in the sauce to blend thoroughly.)
  6. Pour the garlic sauce mixture over the mounded cucumber.
  7. Can also put hot sauce (Sriracha sauce is a good choice) on one side of the plate or sprinkle on top of the cucumbers.
  8. When eating the cucumber slices, be sure to dip in the garlic paste mixture. This is a classic Chinese flavor. (Can mix it all together for easier eating, but that is not how the Chinese eat it…).
