Egg Noodles

Ingredients (Four Servings)

  • 2 cups of all-purpose flour
  • 2 middle sized egg, whisked
  • pinch of salt
  • 1/4cup water
  • flour or cornstarch for dusting and coating


Making the Noodle Dough

  1. Mix the salt and flour in a medium to large bowl.
  2. Mix in the egg and knead the dough gently.
  3. Slowly add the water, small portions at a time until the dough is firm but not sticky.
  4. Continue kneading the dough for several minutes. If the dough is sticky, sprinkle with flour and continue kneading until no longer sticky. If the dough is too hard, dry, and crumbly, then drizzle with water until the dough is firm but not sticky.
  5. After kneading for 10-15 minutes, form dough into a ball and cover tightly with plastic wrap. Let sit for at least one hour at room temperature.

Making the Noodles

  1. Sprinkle a cutting board with flour and roll out a portion of the dough into a thin sheet.
  2. Sprinkle the sheet with flour and roll up the sheet.
  3. Cut the roll into noodle strips depending upon how thin or thick you want your noodles.
  4. Place the noodle strips into a bowl, sprinkle with flour, and toss.
  5. Roll and cut the rest of the dough into noodles.
  6. Pour water into a medium sized pot (about 2/3 full) and bring to boil.
  7. Place the noodles into the boiling water, return water to boil, and reduce heat. Boil for about 5 min.
  8. Remove cooked noodles into a strainer and rinse with cold water.
  9. Use the cooked noodles in a noodle dish recipe of your choice.
